Being Mostly Vegan

When Caleb and I got married, we decided we wanted to make healthy eating and living a major part of our marriage and family. We switched to whole grain rice, whole wheat bread, eating more veggies, and eating mostly white meat. The whole grains didn’t last very long. Ooops. Arroz con frijoles just didn't taste the same.

We stayed trying to be as healthy as we thought possible for years, but honestly it wasn’t super healthy. I knew a few people who had cancer, and it sucked. But then a young boy I knew passed away from it. I’d heard several times that what we eat affects our health, so I kept looking into it. By this point I had given birth to our first child and gained a lot of weight.

I started going to the gym and met a friend who suggested some videos to watch. The more I watched, the more I was convinced that eating animal products caused cancer and was not good for our bodies, and what they did to animals was horribly scary.

So, five and a half years ago we decided to go vegan. It was a decision for our health, more than for the sake of the animals, though we were happy to not be apart of the mistreatment of animals anymore. It was a hard transition, but we did it, faithfully, for about 2 years.

I cheated a bit while pregnant, and then after I gave birth to my second child we decided to scale back to being vegetarians, because it was so limiting at holidays and events. Since then, we’ve all packed on some pounds, me especially. So, after 3 years of being vegetarian, I am retuning to veganism. I’ve transitioned out most dairy and eggs now. And I know my body will thank me.
